I hope the weather cooperates and the rain goes away. I plan to roast a ham on the bbq, roast a variety of veggies in the oven, and serve pierogi and kielbassa as a side. We have one vegan in the crowd and for him I’ll have an additional interesting veggie dish. I still have to pick up my ham at the butchers and do a bit more shopping this morning.
This is all very disturbing. With the Easter Bunny being such a prominent figure in an otherwise religious holiday I have never been able to understand why folks dont cook rabbit at Easter. Isnt there some sort of rabbit marketing board to promote that?

We are holding off on the big Easter meal until the offspring gets home next weekend, but I will make some braised lamb shanks tomorrow, for practice. Wish me luck!
