The dogs and I met up with Salvelinas for a few hours in the woods today. We were hoping to find some black morels or maybe even stumble into some ramps. Unfortunately we found neither, but we did find a mess of fiddleheads.
OMG it’s been years since I’ve had fiddleheads! I don’t remember such a long cleaning and cooking process though. Then again, I don’t remember much of anything… except that I LOVE fiddleheads.
I’m no fiddlehead expert. I cleaned them under a spray of water as best I could. Then I boiled them twice, changing the water, and spraying them again for a second cleaning. While they were cooking, I got some shallots happening with a bit of olive oil in a fry pan with some chopped up ham, and tossed the fiddleheads in that mix just before serving.
They were tasty, but to be honest, I would have preferred morels and ramps.

Those are some fine looking fiddleheads! I’ve only cooked them a couple of times and found them very time consuming to clean. Do you have any tips?
