I’ve been adding more fish into my diet in recent months, so today I stopped in at Mike’s Fish to see what looked good.

Mike’s is the retail outfit at All Seas, our local fish wholesaler. It’s located on Vansco Rd here in South Etobicoke. Vansco is a north/south street that runs between North Queen and Queensway. If you didn’t know it was there you wouldn’t know it was there. They had some nice looking cod so I bought some.

We have fantastic tomatoes ripening each day now and I wanted to incorporate them into tonight’s dinner. I sliced some into a roasting pan along with a sliced up red pepper, a sliced up onion, a sliced up chile, a drizzle of Salah’s Gold olive oil, some salt and pepper and a sprinkle of some kind of tasty spice mix I’ve been using.

I roasted this mess for about 25 minutes in a hot oven, then added in the cod, burying the fish in all the roasted veggies – then put it back in the oven to roast more until the fish was done. I served it with a little dollup of the pesto I made the other day on top of a little red cargo rice.
